Lobster and Chive Bisque

I haven't tried this yet but I found this in The Best of Mr. Food 15-Minute Recipes magazine which my daughter gave me before we left for California. It sounded quick and yummy. For the sherry you can substitute chicken broth.
Ingredients:
3 tablespoons butter
1 tablespoon minced onion
3 tablespoons all-purpose flour
3 cups milk
1 cup heavy whipping cream
1/2 cup dry sherry
1 teaspoon salt
1/8 teaspoon paprika
1 cup cooked lobster meat (about 1 lb.)
2 tablespoons fresh chives, chopped
Directions:
1. Melt butter i a dutch oven over medium heat. Saute minced onion 1 minute or until tender. Add flour, stirring until blended. Cook 1 minute stirring constantly.
2. Gradually add milk and next 4 ingredients. Bring just to a simmer; cook, uncovered 15 to 18 minutes or until slightly thickened (do not boil). Stir in lobster and chives.
