Loaded Potato & Broccoli Bake

I don't remeber where this came from, but it was so good I wanted to share. Hope you enjoy.
Ingredients:
8 medium new potatoes, cut into 1-inch cubes
1 head fresh broccoli, cut into florets
4 scallions, diced
1 cup sour cream
1/2 teaspoon dijon mustard
salt and pepper
4 slices cooked bacon, chopped (optional)
1 (8 ounce) package shredded sharp cheddar cheese
Directions:
1. Preheat oven to 325ËšF. Bring a large pot of water to a boil. Add potatoes, cook 2 minutes, add broccoli and cook additional two minutes; drain all well, pat dry.
2. In a small bowl, combine scallions, sour cream, Dijon mustard, salt and pepper. Set aside.
3. Coat a 9x9 square glass baking dish with cooking spray. Create layers as follows: 1/2 broccoli and potatoes, sour cream mixture, sprinkle with bacon, 1/2 cheddar cheese, remaining broccoli and potatoes, remaining cheese.
4. Bake for 20 minutes, covered with tin foil. Bake an additional 10 minutes uncovered until cheese has melted completely and is bubbling.
5. Allow to cool 5-10 minutes before serving.
