Delicious lo mein. Perhaps try sprouts instead of water chestnuts.
Ingredients:
1/4 cup soy sauce
1 cup bean sprouts
5 button mushrooms, sliced
1 cup carrot, in matchsticks
2 celery ribs, sliced
2 green onions, sliced
4 ounces whole wheat spaghetti noodles
2 chicken breasts
1 tablespoon olive oil
Directions:
1. Grill chicken, slice into pieces. A good marinade for this is 2 parts soy sauce, 1 part lime juice, 2 parts water.
2. Cook spaghetti noodles to taste.
3. Cook vegetables in oil until tender but still crisp. Add chicken and soy sauce, Cook on medium.
