My late MIL had a recipe for everything! Here's her quick and easy chilled avocado soup she served at many luncheons on the fly. Serve with a salad and some bread and voila, instant success!
Ingredients:
2 (10 1/2 ounce) cans cream of chicken soup
1 cup cream
3 avocados, peeled and seeded
1 lime, thinly sliced
1 tablespoon fresh lemon juice
kosher salt and freshly cracked black pepper
Directions:
1. Pour all ingredients into the blender and blend until smooth.
2. Pour into a chilled soup tureen.
3. Garnish with the lime slices.
4. Serve cold.
