Little Peas With Lettuce

First time I made these for company, I had them scoffing at how a little lettuce braised in the pot could make peas taste better. They were wrong, and I won them over hands down. Simple peas can really be delightful when made with care.
Ingredients:
5 tablespoons of sweet unsalted butter, divided use
2 lbs. of peas, tiny fresh are best - but i've used frozen to some success
1 head of iceburg lettuce washed, shredded
a dozen pearl onions, peeled (a pain)
3 sprigs of fresh thyme
1 1/2 teaspoons of sugar
1/4 teaspoon of salt
1/8 teaspoon of white pepper (i use black, i don't usually have white pepper hanging around)
Directions:
1. In a sauce pan, melt 3 tablespoons of butter.
2. Add the shredded lettuce, top with 2 lbs. of tiny peas, onions, thyme and seasonings.
3. Mix well.
4. Cover tightly and cook on the barest of simmers, very low heat.
5. The moisture from the lettuce should be sufficient liquid to cook the peas. However you may find it necessary to add a spoonful of water to keep anything from sticking.
6. Fresh peas will take at least 30 to 40 minutes to be tender. I do the frozen in about 20 (but then I par blanch the onions so they are fork tender when cooking with the peas) A rock hard onion is awful with this dish.
7. At the end of cooking stir in the remaining two tablespoons of butter, taste for salt and pepper and serve to the delight of your guests.
