What is meatloaf but a way to use up items in the fridge? This recipe uses a little bit of what I had in the fridge tonight. My family will eat meatloaf only in muffin form. I'm sure it could be made in a loaf if cooked longer, about an hour. I put ketchup on only half the muffins for immediate eating (and next day leftovers) and then leave the rest bare to freeze.
Ingredients:
1 lb ground turkey
1 lb ground beef
2 ounces mushrooms, chopped
2 carrots, shredded
1 onion, chopped
1/3 cup oat bran
2 teaspoons italian seasoning
1 (1 ounce) packet lipton onion soup mix
2 tablespoons worcestershire sauce
2 eggs
ketchup
Directions:
1. Preheat oven to 400 degrees F.
2. Mix all dry ingredients together and combine well. Add all wet ingredients and meat and mix with hands until well dispersed.
3. Scoop into muffin tins either sprayed with non-stick spray or lined with muffin cups. Top with ketchup.
4. Bake at 400 for 25-30 minutes.
