Lite Broccoli Salad

An alternative to the one with mayo, raisons and bacon. (my husband won't eat a raison if he can see it)
Ingredients:
1 bunch broccoli
1/2 cup thinly sliced celery
1/4 cup diced red onion
2-3 tablespoons honey
1/4 - 1/3 cup apple cider vinegar
1/2 teaspoon salt
1/4 cup quality lite vegatable oil
freshly ground black pepper to taste
2 quarts boiling water (to blanch)
Directions:
1. Separate broccoli into florets, peel and slice stem into 1/2 inch slices
2. Place stem slices into boiling water first, return to boil, add florets and cook 3 minutes.
3. Drain broccoli in a colander and immediately place under cold running water to stop cooking.
4. Drain thoroughly.
5. Wisk together honey, vinegar, salt and oil.
6. Combine vegatables,add pepper and toss with dressing.
7. Chill before serving, giving it another stir.
