This recipe is actually my co-worker's sister in law's recipe. Sounds a little strange but is VERY good.
Ingredients:
2 -4 cups of cooked pinto beans, depending on how many your cooking for
1 -2 tablespoon vegetable oil
1/4-1/2 cup mayonnaise, i prefer best foods or hellmans
salt, to taste
pepper, to taste
Directions:
1. Heat oil in skillet, add beans and smash them with a potato smasher in the pan. Stir and heat through. Add the mayo and mix in completely. Cook an additional minute to meld flavors and serve.
