Lisas Stuffed Mushrooms

Ingredients:
24 large mushroom caps (stems removed and set aside)
2 t. olive oil
1/4 cup minced celery
1/2 cup chopped onion
mushroom stems, chopped
4 slices turkey bacon, diced
1/4 cup green pepper, chopped
1/2 cup heavy cream
1/2 cup swiss cheese, grated
1 cup cooked rice
parmesan cheese
Directions:
1. In a large frypan, heat oil.
2. Add celery, onion, mushroom stems, turkey bacon, and green pepper.
3. Saute for 5-10 minutes until vegetables are soft.
4. Reduce heat to low; add cream and cheese. Stir until cheese melts.
5. Add cooked rice; remove from heat.
6. Place mushroom caps on greased baking sheet.
7. Stuff each cap with 1 tablespoon of filling.
8. Sprinkle Parmesan cheese on top.
9. Bake in a preheated 375 degree oven for 30 minutes.
