These are a flat cookie made with whole-wheat flour and sweetened with honey. Good for snacking or s’mores! Ingredients:
2 cups whole wheat flour
1 cup flour
1/2 tsp baking soda
1 tsp baking powder
pinch salt
1/2 cup shortening
3/4 cup honey
1 tsp vanilla
4 tbsp skim milk
Directions:
1. Sift together the first 5 ingredients. Set aside.
2. Cream together the shortening and honey.
3. Add the vanilla extract.
4. Add flour mixture to shortening mixture, alternating with the milk. Mix well after each addition.
5. Divide dough into thirds; roll out each portion onto a cookie sheet to about 1/2” thick.
6. Cut into six squares. Prick each cracker several times.
7. Bake at 350°F for about 12 minutes.
