Linguine With White Beans & Shrimp |

Very easy to make! Ingredients:
2 tablespoons olive oil |
1/2 onion, chopped |
1 garlic clove, crushed |
2 teaspoons maple syrup |
1 (14 ounce) can chopped tomatoes |
1 (28 ounce) can white beans, rinsed & drained |
2 cups arugula |
3/4 lb shrimp, cooked |
salt (to taste) |
pepper (to taste) |
1 lb linguine, cooked |
Directions:
1. Heat olive oil in a large frying pan and cook onion until soft. 2. Add garlic and stir to soften. 3. Stir in maple syrup and tomatoes. 4. Cook gently for about 10 minutes, stirring occasionally. 5. Add beans and arugula and cook on low heat until arugula wilts. 6. Add a little water if mixture gets too thick. 7. Stir in shrimp. 8. Season to taste with salt and pepper. 9. Serve over linguine. |
