Here is another pasta salad-lots of flavor here, really enjoyable!
Ingredients:
4 ripe tomatoes, seeded and diced
1/4 cup vegetable oil
1/4 cup thinly sliced green onion
2 tablespoons lemon juice
1 garlic clove, crushed and chopped
1 teaspoon dried basil leaves, crushed
1/2 teaspoon dried oregano leaves, crushed
1/2 teaspoon dried rosemary leaves, crushed
salt and pepper
handful linguine
2 cups cottage cheese
1/3 cup finely chopped parsley
cucumber, slices
Directions:
1. Combine tomatoes, oil, onions, lemon juice, garlic, basil, oregano, and rosemary in a small bowl. Add salt and pepper to taste. Cover and chill 1 hour to blend flavors.
2. Cook linguine according to package directions; drain. Rinse in cold water; drain.
3. Combine cottage cheese and parsley.
4. To serve, divide pasta among 4 chilled salad plates; top with cottage cheese mixture, then tomato mixture. Garnish with cucumber slices.
