Linda's Broccoli Cheese Pasta Salad

Ingredients:
8 ounces rigatoni pasta, uncooked
4 cups fresh broccoli, flowerets
4 ounces mozzarella cheese, cubed
1/3 cup chopped fresh parsley
2 tablespoons chopped fresh basil
lettuce leaf
cherry tomatoes, halves for garnish
1/2 cup vegetable oil
1/3 cup lemon juice
2 teaspoons dijon mustard
3 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon pepper
Directions:
1. Cook pasta according to pkg.
2. directions, and drain.
3. Rinse with cold water, and drain.
4. Cook broccoli in a small amount of boiling water 2-3 minutes or until slightly tender.
5. Drain.
6. Rinse with cold water, and drain.
7. Combine pasta, broccoli, mozzarella cheese, and herbs in a lg bowl and, toss with Mustard Vinaigrette, and serve on a lettuce-lined platter.
8. Mustard Vinaigrette: Combine all ingredients in a jar, cover tightly, and shake vigorously.
9. Cover, and chill.
