Lime Ginger Butter

Great with fish or chicken or vegetables! Adapted from The New Basics Cookbook.
Ingredients:
4 tablespoons butter, room temperature
2 teaspoons grated lime zest
1 teaspoon ground ginger
1/4 teaspoon salt
pepper, to taste
Directions:
1. Stir all ingredients together in a small bowl until smooth. Shape into a cylinder 2 1/2 wide, and wrap in plastic wrap or foil.
2. Put in refrigerator until firm, about 1 hour. Enjoy!
3. Makes 5 tbls.
