Lime and Onion Brown Rice |

A great side dish of brown rice, sauteed onions, and fresh squeezed lime juice. As yummy as it sounds! Ingredients:
2 cups uncooked brown rice (quick cooking) |
1 3/4 cups water |
1 -2 chicken bouillon, cube(s) |
1 teaspoon olive oil |
1/2 of medium onion, chopped |
2 -3 limes |
cilantro, chopped |
Directions:
1. Chop onion and cilantro. 2. Bring water and bouillon to boil in sauce pan, adding brown rice. Simmer with lid on for 5 minutes, turn heat off, and allow rice to sit for another 5 minutes. 3. Meanwhile, saute diced onions in olive oil until lightly browned and softened. 4. Transfer onions to same pan as rice; stir. Squeeze juice from the limes over rice mixture; stir. 5. Garnish with cilantro, optional. Serve immediately. |
