Limantro Tofu

Lime-cilantro tofu. Serve with brown rice.
Ingredients:
1/4 cup chopped cilantro
3 cloves garlic, minced
1 lime, zested and juiced
1 1/2 teaspoons soy sauce
1 teaspoon ground cumin
1/2 teaspoon brown sugar
1/2 teaspoon cayenne pepper
1 (12 ounce) package firm tofu, drained and cubed
1 tablespoon olive oil, or more if needed
Directions:
1. Mix cilantro, garlic, lime zest and juice, soy sauce, cumin, brown sugar, and cayenne pepper in a bowl. Add tofu and marinate in refrigerator for 1 hour to overnight. Remove tofu with a slotted spoon.
2. Heat olive oil in a skillet over medium heat; cook and stir marinated tofu until browned on all sides, 10 to 15 minutes.
