Lima Beans and Ham

Can be just a meal in itself, or served along with other accompaniments like coleslaw or your favorite salad.
Ingredients:
3 cups fresh lima beans
3 cups water
2 potatoes, diced
1 (15.25 ounce) can whole kernel corn
1 large tomato, diced
1/2 medium onion, diced
1 stalk celery, diced
2 tablespoons cornstarch
1/4 cup milk
6 ounces cooked ham, diced
1 sprig chopped fresh parsley
salt and pepper to taste
Directions:
1. Place the lima beans in a large pot, and pour in the water. Bring to a boil, reduce heat to medium, and cook 15 minutes. Mix the potatoes, corn, tomato, onion, and celery into the pot, and continue cooking 15 minutes.
2. In a small bowl, dissolve the cornstarch in the milk. Stir into the pot, and mix in the ham. Continue cooking until heated through. Season to taste with salt and pepper and sprinkle with parsley before serving.
