Lima beans do not have the best reputation, but this is a delicious spread. It's quick & fairly easy to make... and since it uses frozen lima beans, it's easy to keep the ingredients on hand. Ingredients:
2 cups frozen lima beans
2 cloves garlic, peeled and sliced (or crushed if you prefer)
1/2 cup water
salt
3 tablespoons olive oil
1 lemon
freshly ground black pepper
flat bread crackers (for spread) or bread (for crostini)
Directions:
1. Combine lima beans, garlic, 1⁄2 cup water and a pinch of salt in a small pot.
2. Bring to a boil over medium-high heat, cover, reduce heat to low, and simmer for 15 minutes.
3. Put the contents of the pot into a food processor and coarsely purée (or you can just mash by hand).
4. Mix in the olive oil.
5. Add lemon juice to taste (perhaps 1 to 2 tablespoons)
6. Season with salt and pepper.
7. The beans can be served in a bowl as a cracker spread (I like it with flat bread) or spread on toasted bread as a crostini.
