Lima Bean Soup With Tomato

A delicious, hearty soup.
Ingredients:
20 ounces baby lima beans, cooked and drained
2 tablespoons onions, chopped
1/4 teaspoon fresh thyme, chopped or 1/8 teaspoon dried thyme, crushed
1 medium garlic clove, minced
2 tablespoons butter
14 ounces chicken broth
14 ounces beef broth
1 cup tomato, diced (can be from a can)
Directions:
1. Mash about 2 cups of the lima beans with a fork and set aside.
2. In a saucepan, saute onion, thyme, and garlic in butter until tender, about 5 to 7 minutes. Add mashed lima beans, whole lima beans, broths, and tomato. Simmer a few minutes to heat through and serve.
