Ingredients:
1 bag, 1 lb frozen lima beans ( approximately 3 cups )
1 sm red onion finely chopped
2 cups chopped tomatoes
1/2 bunch fresh parsley chopped
1/4 cup chopped green or black olives
1 tsp dried oregano
1/2 cup olive oil
1/4 cup fresh lime juice
2 garlic cloves minced
8 oz feta cheese crumbled or as desired
salt and pepper to taste if needed
Directions:
1. Cook beans to pkg directions and drain and cool.
2. Combine remaining ingredients except cheese.
3. Add lima beans and feta cheese.
4. Mix to blend.
5. Taste for seasoning
6. Chill very well.
