Lima Bean Fritters (Fried Okara Patties)

Ingredients:
2 cup(s) okara (lima bean pulp), or cooked mashed up lima beans
1 whole(s) large egg beaten
1/4 cup(s) flour
1/4 cup(s) corn flour or corn meal
1/2 large onion grated
1/2 cup(s) dehydrated dry mash potatoes
2 teaspoon(s) olive oil
dash garlic salt
dash celery salt
1/4 teaspoon(s) salt
a few twists of fresh ground pepper (optional)
3 tablespoon(s) or more of margarine or butter
Directions:
1. Beat the egg in a large bowl, add okara or cooked mashed lima beans (I remove the skins after soaking before cooking) the beans. Add the onion and the rest of the ingredients. Knead the mixture with your hands for about 4 to 5 minutes.
2. Form a large ball in the center of the bowl and let it rest for about 15 to 20 minutes.
3. Melt the margarine or butter in a large non stick frying pan, let it heat up thoroughly. Make small thin patties and put them in the hot margarine in the pan. They should be thin so they will cook fairly quick and thus not be greasy from sitting in oil too long. Fry the patties on each side until browned. Gently lift the edge of the fritter to check for doneness. They will fall apart if you are not careful. Once they are done well on one side they hold together better for flipping.
4. Measurements are approximate as I just eye ball them when making this.
5. There are so many ways to tweak this so use your imagination and prepare them the way you like them. They can even be make sweet for breakfast. This is just a starter recipe.
6. This recipe is great for vegetarians, modify for vegans and great for diabetics because of the lower carbs and lots of fiber. These are very filling so . . .
