Lighter Layered Squash Casserole

Just came up with this recipe to use up squash I had bought at the Farmer's Market. It's a little lighter than the usual squash casseroles...but still comforting, warm, cheesy and delicious! It's very versitile.. Read more ..amounts and types of cheeses are up to your personal taste!
Ingredients:
olive oil
3-4 large yellow squash (or zucchini), sliced longways
1/2 yellow onion, diced
2 large garlic cloves, minced
salt and pepper to taste
4 ounces crumbled feta cheese (approximately)
white cheddar, cut into small pieces (i cut up several slices into pieces)
approx 1/4 cup of fresh grated parmesan cheese
sprinkling of bread crumbs
small chips of butter
Directions:
1. Drizzle oil on bottom of baking dish
2. Spread one layer of sliced squash over oil
3. Sprinkle with salt and pepper
4. Sprinkle on feta cheese
5. Top with onion and garlic
6. Add another layer of squash
7. Add layer of white cheddar pieces
8. Sprinkle with freshly grated parmesan cheese
9. Add as many layers of the veggie and cheese as you like, depending on how much you are wanting to make
10. Top with thin layer of breadcrumbs
11. Add chips of butter and a drizzle of olive oil to top
12. Bake at 400 for 40 minutes, until brown and bubbly!
