A lighter version of spinach & cheddar quiche
Ingredients:
1 cup egg beaters
1 1/4 cups skim milk
1 tbsp dijon mustard
1/4 tsp salt
1/4 tsp pepper
1/4 cup whole wheat flour
1 cup whole wheat crackers, crushed
1 cup cheddar cheese, shredded
1/2 cup cherry tomatoes, cut in half
1/2 cup spinach, chopped
Directions:
1. Mix egg substitute, milk, mustard, salt, pepper, and flour
2. Add crackers and 3/4 cup cheddar cheese to mixture, then pour into pie dish
3. Distribute spinach and tomatoes so they are submerged in mixture, then top with remaining cheese
4. Bake at 350* for 30 minutes or until knife inserted comes out clean
