Light Macaroni and Cheese

Reduced fat/reduced calorie homestyle macaroni and cheese. Makes great leftovers.
Ingredients:
2 1/2 cups skim milk
1/4 cup all purpose flour
6 oz cheese, cheddar, medium, light
2 oz light cream cheese
6 cups macaroni
1/2 tsp mustard powder
1/2 tsp salt
1/4 tsp paprika
1/4 tsp black pepper
Directions:
1. In medium saucepan, combine the milk and flour until smooth. Cook over medium high heat until mixture is bubbly and thickened, about 7-8 minutes.
2. Stir in mustard powder, salt, paprika, pepper and cheeses until cheeses are completely melted. (Optional: stir in 1/4 cup chopped green onion)
3. Combine cheese sauce with cooked macaroni. Transfer to a large casserole dish that has been sprayed with non-stick spray.
4. Bake at 350 degrees F, uncovered for 30 minutes.
5. Serve immediately.
