Light Lemon Cauliflower

Cauliflower is under-used and usually drenched with cheese sauce. This is light, good for summer, as a side for chicken.
Ingredients:
1/4 cup fresh parsley, chopped and divided
1/2 teaspoon grated lemon peel
6 cups, about 1-1/2 pounds, cauliflower florets
1 tablespoon butter
3 cloves galic, minced
2 tablespoons fresh lemon juice
1/4-1/2 cup grated parmesan cheese
Directions:
1. Place 1 tablespoon parsley, lemon peeland about 1 inch of water in a large saucepan.
2. Place cauliflower in steamer basket and place in saucepan.
3. Bring water to a boil over medium heat.
4. Cover and steam for 15-17 minutes or until cauliflower is crisp-tender.
5. Remover and place into a large bowl.
6. Keep warm.
7. Reseve 1/2 cup of hot liquid.
8. Heat butter in a small saucepan over medium heat.
9. Add garlic,cook and stir for 2-3 minutes, or until soft.
10. Stir in lemon juice and reserved liquid.
11. Spoon lemon sauce over cauliflower.
12. Sprinkle with remaining parsley and parmesan cheese before serving.
13. Serve with lemon sices if you want to be fancy.
