Light Italian Mac ' n Cheese

Directions:
1. Cook 1 pkg. whole grain penne
2. Puree:
3. c. cottage cheese (2%)
4. /4 c. diced onion
5. T. minced garlic
6. T. dijon mustard
7. /2 t. salt
8. /4 t. nutmeg
9. /8 t. cayenne
10. Heat:
11. /2 c. skim milk
12. T. flour
13. Combine:
14. /4 c. parmasan and 3/4 c. fontina
15. /2 c. shredded mozzerella
16. Garnish with:
17. Cherry tomatoes
18. Basil
19. Cook Penne, drain and set aside. Puree cottage cheese, onion, garlic, dijon, salt and nutmeg in food processor until smooth.
20. Heat milk in pan over med. heat until milk steams. Slowly whisk flour into milk; cook, stirring often, until it thickens, 8-10 minutes. Whisk in cottage cheese mixture until smooth.
21. Combine cheese, then add by handfuls to milk mixture, whisking until melted before adding next handful. Once cheese is melted stir in pasta. Garnish with tomatoes and basil.
