Light Healthy Mushroom and Spinach Leaf Risotto

This was an adaptation of a Weight Watchers Recipe
Ingredients:
175 g mushrooms
1 garlic clove
1 teaspoon olive oil
1/2 onion, finely chopped
1/2 cup arborio rice
1 1/2 cups chicken stock
1/2 cup fresh spinach leaves
1 1/2 tablespoons parmesan cheese, grated
1/2 lettuce leaf
1/3 tomato
1/2 cucumber
1/2 carrot
Directions:
1. Prepare salad.
2. Pan cook mushrooms & garlic until tender, use a little water to stop them sticking.
3. Fry onion in oil until cooked, add rice and 1/2 cup stock until absorbed. Keep adding stock 1/2 cup at a time stirring constantly until rice is soft.
4. Stir through mushroom and spinach until warmed through.
5. Serve with side salad.
