This sandwich is a nice light twist on a Chicken Salad sandwich. Made with lighter ingredients and flavored with curry powder which you can add up to 1/2 teaspoon, depending on your tastes. I love cashews so you can add more than 1 tablespoon per serving if you like. Read more . I bought a rotisserie chicken at the store and took the meat off of it to make this sandwich. You can almost buy the cooked chickens now at the Costco or Sam’s club for as much as a fresh chicken in the poultry section or a frozen one! The ones they get at the warehouse stores seem to be bigger for some reason as well. I don’t usually make this for 2 as was in the original recipe. So, double it if you like to keep you eating a nice change for a lunch throughout the week. Or serve with sliced fresh fruit for a casual dinner for two.
Ingredients:
1/4 cup fat-free sour cream
1 tablespoon light mayonnaise
1/4 teaspoon curry powder
(or replace the curry powder with emerile la gasse’s poultry rub-1/2 teaspoon)
2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)
1/3 cup chopped celery
2 tablespoons chopped dry-roasted cashews
1 tablespoon finely chopped green onions
2 (2-ounce) whole wheat hamburger buns
Directions:
1. Combine first 3 ingredients in a large bowl, stirring until well blended. Add chicken, celery, cashews, and green onions; stir well. Serve chicken salad on buns.
