light Amazing Coconut Pie

I really like this recipe but it needed to be lightened up a bit. This is my version, more coconut flavor, more fiber, less fat and sugar than the old version.
Ingredients:
1 1/2 cups nonfat milk
1/4 cup sugar
1/2 cup sugar-free coconut syrup (torani)
1/2 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon salt
3 eggs (large or extra large)
1/4 cup butter, melted
1 1/2 teaspoons vanilla
1/4 teaspoon almond extract
1 cup unsweetened coconut, toasted
Directions:
1. Toast Coconut until golden brown.
2. Combine all of the ingredients, except the coconut, together in a blender.
3. Cover and blend on low speed for 3 minutes.
4. Pour into a greased 9-inch pie pan.
5. Let stand about 5 minutes then sprinkle with coconut.
6. Bake at 350 degrees for 40-45 minutes.
7. Serve warm or cool.
8. This tastes much better cooled over night!
