Lex's Unbelievable Fulla Falafel Cakes.

Tastes like falafel, looks like falafel but half the calories and fatfree!!!
Ingredients:
1 cup cauliflower, mashed
3/4 tbsp corn flour
1 onion, chopped very finely
2 cloves of garlic, chopped finely
3 tablespoons of fresh parsley, chopped
1 teaspoon coriander
1 teaspoon cumin
1 salt
1 pepper
Directions:
1. Boil cauliflower in salted water until soft.
2. Saute onion and garlic until translucent..
3. Drain water, absorb excess water with kitchen paper, mash.
4. Add flour, onion, garlic, seasoning and spices mix well until combined.
5. Put aside until cool.
6. When cooled divide dough into 4 or more falafel sized balls. Brush the balls with soy or soy milk to brown whilst cooking.
7. Bake in oven 200C until browned turning once. Aprox 10-15 mins.
