An oldie but goodie: This is very tasty and I make a few loaves every summer when garden lettuce is avialable.Don't be fooled by the name- it is delicious! Ingredients:
1 3/4 cups sugar |
3/4 cup oil |
4 eggs |
1 1/2 tbs lemon juice |
3 cups flour |
3 tsp baking powder |
1 1/2 tsp baking soda |
1 tsp salt |
1/2 tsp cinnamon |
2 cups finely chopped lettuce ( avoid the bitter types ) |
3/4 cup chopped walnuts |
Directions:
1. Mix sugar with oil. 2. Beat in eggs. add lemon juice. 3. sift dry ingredients and mix into sugar mixture. 4. Stir in lettuce and nuts. 5. Pour into 2 greased 8 x 4 inch loaf pans. 6. Bake 350 degrees 50 minutes or tested done. 7. cool 10 minutesin pan and remove to cool completely. 8. Freezes well. a nice quick bread to serve with cream cheese . |
