I don't particularly care for fish but this is delicious. Make sure to use fresh fish to avoid a fishy flavor. This can be made with any white mild fish and is delicious served with sauted broccoli, yellow squash and grape tomatoes with a little bit of lemon.
Ingredients:
4 oz tilapia
2 tbsp salted butter
4 tbsp parmesean cheese
1 cup green bell pepper
1 onion chopped
1 salt and pepper to taste
Directions:
1. place diced bell pepper and onion in the bottom of a pyrex dish lined with parchment paper for easy clean up.
2. scatter the onion and bell pepper evenly across the bottom of the dish
3. lay the fish fillets on top of the diced veggies
4. season with salt and pepper, place a 1/2 tbsp of butter on each fillet (i put mine in chunks)
5. bake for 12 mins at 350 degrees F
6. remove from oven and place oven on broil
7. sprinkle 1 tbsp freshly grated parmesean cheese on top of each fillet and broil until melted.
