1 cup lentils, cooked
2 medium onions, sliced into strips
3 medium carrots, diced
1 cup baby spinach
1 tablespoon oil
3 tablespoons balsamic vinegar
salt and pepper
Directions:
1. heat oil, add onions and cook for 15 min until black.
2. ad carrots (4 min), stir in spinach.
3. combine rice, lentils, and veggies with vinegar and salt.
