Lentils and Rice (Koshary) (Egypt)

Yet another recipe I discovered on the World Hearth Circle of International Cooking. This looks promising as a meatless main dish or a side dish.
Ingredients:
1 tablespoon olive oil
1 medium onion, finely chopped
1 cup lentils
1 cup water
1/4 teaspoon pepper
1/4 teaspoon cumin
2 cups water
2 cups long grain white rice
1/2 teaspoon salt
Directions:
1. Heat oil in pan, add onion and fry for 3 minutes.
2. Add lentils, water, pepper and cumin.
3. Bring to a boil and simmer for 5 minutes. Add 2 cups water and bring to a boil.
4. Add rice and salt and continue to boil.
5. Then reduce heat to low, cover the pan and simmer for 15 minutes.
6. Remove from heat and let sit for 10 minutes. Serve.
