Lentils and Rice

Ingredients:
1/3 cup olive oil
1 cup dry rice
1 cup dry lentils
3 cups diced onion
1/4 tsp cumin
1 salt
Directions:
1. Cook rice
2. Add lentils to approx 4 cups of water. Cook for about 25 minutes or until just soft. (time will vary based on freshness of lentils).
3. Meanwhile chop onion and sautee with oil in shallow pan. Slowly cook over 25 minutes, and allow to caramelize.
4. When onions are ready add cumin and mix (remove half and place on papertowel for garnish if desired).
5. Stir in lentils (use a slotted spoon, or strainer). Cook for a couple of minutes.
6. Add hot rice.
