Lentils and Bacon

Berliner linsentop is the German word for this. I found the recipe in an 1984 recipe book of World Best Vegetable recipes.
Ingredients:
2 1/4 cups lentils, washed and cleaned
6 cups water
1 lb thick slab bacon, cut in 1 inch pieces
3 potatoes, peeled and cut into 1/2 in cubes
1/2 cup vinegar
1/4 cup sugar
salt
2 tablespoons butter
2 onions, chopped
2 tablespoons parsley
Directions:
1. Combine lentils,water and bacon in a large heavy saucepan .
2. Bring to a boil, then reduce heat.
3. Cover and simmer for 45 minutes.
4. Add potatoes and continue to cook until lentils are tender about 15 minutes.
5. Stir in vinegar and sugar.
6. Taste and add salt if needed.
7. Place in serving dish and keep warm.
8. Melt butter in skillet ;saute onions and parsley over medium heat until onions are transparent.
9. Spoon over lentils.
10. Serve hot.
