Lentil Vegetable Stew

Fibre & Protein in the same little legume? Lentils, where have you BEAN all my life? (ok, that pun doesn't really work). This is a hearty, filling meal in a bowl. Add more water if you like a more soupy-soup.
Ingredients:
4 cups green lentils (small)
4 cups beef broth
2 cups water
2 cups carrots
2 cups celery
1 cup cabbage
1 cup parsnips
1 cup cauliflower
14 oz tomatoes
1/4 cup red pepper
1/4 cup green pepper
2 tbsp garlic
Directions:
1. Normally you would start by frying up some onions, but my husband's allergic so I skipped 'em.
2. Chop all veggies coarsely or finely depending on your taste
3. Add fine herbs such as thyme, oregano, rosemary, parsley to taste
4. Add all ingredients to a slow-cooker
5. Cook on high 4-6 hrs
6. Add salt and pepper to taste.
