Lentil, Turkey & Wild Rice Soup

Ingredients:

Directions:

  1. Melt butter over med-high heat.
  2. Add leeks, carrots & celery and cook until leeks are softened.
  3. Stir in bay leaf, thyme, rice & chicken stock.
  4. Cover & bring to boil.
  5. Reduce heat to medium low & simmer 30 minutes.
  6. Stir in lentils & turkey.
  7. Cook until rice is tender (about 25 minutes longer).
  8. Remove bay leaf & thyme sprig.
  9. Stir in parsley & pepper just before serving.
