Ingredients:
575 g dried lentils, sorted and rinsed
3 cups water
14 oz vegetable stock
14 oz diced tomatoes
1 large onion, chopped
1 green bell pepper, chopped
4 stalks celery, chopped
1 medium carrot, sliced
2 cloves garlic, chopped
1 teaspoon dried marjoram
1/4 teaspoon black pepper
5 cups cooked couscous
Directions:
1. Combine all ingredients in a large pot, bring to the boil then cover and simmer until lentils and vegetables are cooked (about 2 - 3 hrs)
2. Serve over couscous
