Hardy and easy stew that will warm you on a cold winters day and fill your belly without emptying your wallet. My family in Germany uses smoked and salted pork belly but smoked bacon works very well, too.
Ingredients:
2 cups lentils (dry)
2 cups water
2 cups broth
1 potato
1 carrot
3 slices smoked bacon (smoked and salted) or 3 slices pork belly (smoked and salted)
1/8 teaspoon cumin
1/4 teaspoon paprika
salt
pepper
Directions:
1. Dice potatoes and carrots small.
2. Ad lentils, potatoes and carrots and the bacon or pork belly slices in a large pot, season and boil with 2 cups of broth and 1 cup of water for approximately 1 hour. Ad the remaining 1 cup ounce by ounce if stew gets too thick over time.
3. Stew is best re-heated the next day :D if you want it quicker just let stew cool down and re-heat. Stew should be very thick with little liquid.
