Lentil Soup- Cfg-Cheap, Filling and Good for You!

Can be made from your pantry, no running out into the cold winter to make dinner. Comes together fast- I make this year round but it is extra good in the cold NY winter Perfect meatless but any meat could be added, left over ham, bacon, sausage. If I am making this for lunch, I fry bacon in the pot, remove the bacon for a sandwhich and leave fat in the pot tosauté the veggies.
Ingredients:
1 teaspoon olive oil
1 cup baby carrots
1 onion
2 stalks celery
1/2 lb dried lentils
1 teaspoon italian seasoning
1 teaspoon garlic powder
6 cups water
salt
fresh pepper
Directions:
1. Set pot on medium heat, add oil, sauté onions,carrots and celery until they begin to soften, add everything else, cover and simmer for a half an hour.
