Lentil soup is popular all over the Middle East and Mediterranean . It is a vegetarian soup , but usually made with meat stock and is served hot . Lentil soup is mentioned in the Bible: In Genesis 25:34, Esau is prepared to give up his birthright for a pot of fragrant red lentil soup being cooked by his brother, Jacob.
Ingredients:
1 small cup red / green / yellow , cooked
2 tbsp carrots
1 small potato
1 tbsp parsley
1 onion , sliced .
3 cloves garlic
1 tsp cumin
1 tsp lemon juice
pinch of hing
2 c water
3 tbsp croutons
1 egg white , slightly beaten ( optional )
3 to 4 small cup meat stock / water
Directions:
1. Boil everything until well cooked .
2. Then puree them .
3. Add water or stock to the desired consistency .
4. Simmer .
5. Add the egg white in and swirl with a chopstick so that white ribbons will form ( option )
6. Garnish with croutons .
