A hearty soup, great for a cold day. Enjoy a healthy sandwich with a cup of the soup. (Serving size is one cup or 284 grams)
Ingredients:
1/2 lb. lentils
6 cups water
2 carrots, chopped
1 clove garlic, crushed
1 1/2 cup low sodium tomato juice
1/2 cup minced parsley
1 t butter
1 tsp. salt
1 dash pepper
1/2 tsp. dried oregano
Directions:
1. Combine the lentils and water in a kettle. Cook 30 minutes or until lentils are tender. Add everything else. Bring the soup to a boil. Reduce heat. Simmer just until carrots are tender.
2. Option: Add diced bacon or ham cubes or stir in 1 T wine vinegar just before serving the soup.
