Lentil soup with ground beef and mirapoux veggies. Serving size is 1 cup
Ingredients:
1 lb. dry lentils
1 lb. beef, ground 95%, browned
1 cup onion, chopped
1 cup celery, chopped
1 cup carrot, chopped
10 cup water
3 clove garlic, minced
4 tbsp salt
3 tbsp cumin
2 tbsp curry powder
1/2 tsp chili powder
1 tsp black pepper
Directions:
1. Place dry lentils and water in a pot and boil.
2. Brown ground beef with garlic, onion, celery, carrot and seasonings then add to pot of lentils.
3. Reduce heat to simmer and continue to cook until lentils are tender. Adjust seasonings as necessary to taste.
4. Serve over Brown Rice
