Sometimes I substitute other things for the lentils : TVP, ground soy beef , brown rice, oats...whatever. This is great over toasted whole wheat buns or rice.
Ingredients:
2/3 cup lentils
3/4 cup onion, diced
3/4 cup green pepper, diced
1/2 cup celery, diced
1 jalapeno pepper, diced (optional)
1 garlic clove, minced
1 cup water or 1 cup vegetable stock
1 cup tomato sauce
1/2 cup ketchup
1/2 cup chili sauce
1 tablespoon brown sugar
1 tablespoon apple cider vinegar
1 tablespoon dijon mustard
1 teaspoon worcestershire sauce (regular or vegetarian)
Directions:
1. Combine all ingredients in a pot and simmer about 2 1/2 - 3 hours or until lentils are very soft.
