Lentil Salad With Feta Cheese

Ingredients:

  • 1 tsp salt
  • 1 small onion
  • 2 tbsp mint (optional)
  • 1/3 cup olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp za'atar spice mix

Directions:

  1. Cook lentils according to directions on bag, until tender (but not mushy).
  2. Remove from heat and let cool at room temperature.
  3. Chop up all the vegetables, and crumble the feta.
  4. Combine all the salad ingredients together.
  5. In a small bowl prepare dressing by whisking all the ingredients together.
  6. Pour dressing over salad, mix well and chill for a couple of hours before serving.
