Lentil Patties With Coconut-mango Relish

A delicious and different type of appetizer. Cooking Class Rice & Beans.
Ingredients:
coconut-mango relish
1 1/4 cups uncooked dried lentils
1 small onion, chopped
2 cloves garlic, minced
1/2 tsp. cumin (i recommend using less)
1/4 tsp. salt
1/4 tsp. black pepper
1/8 tsp. hot pepper sauce
1 small carrot, shredded
1/4 cup all-purpose flour
1 egg
2 tbs. chopped ripe pitted olives
vegetable oil
Directions:
1. Prepare Coconut-Mango Relish:
2. 2 Tbs. fresh Ginger
3. 1/2 cup fresh Cilantro
4. 1/2 cup shredded Coconut
5. 2 Tbs. fresh Lemon Juice
6. 1 Tbs. Water
7. 1/2 cup chopped Mango
8. Place all ingredients except mango in food processor; process until finely chopped. Stir in mango. Cover; refrigerate up to 4 hours before serving.
9. Rinse lentils thouroughly in colander under cold running water.
10. Bring to a boil over medium-high heat.
11. Reduce heat to low. Simmer, covered, 30 to 40 minutes until lentils are tender; drain.
12. Line baking sheet with double thickness of paper towels.
13. Spoon lentils onto paper towels. Let stand 20 minutes or until lentils are cool and most of moisture has been absorbed.
14. Combine half of lentils, onion, garlic, cumin, salt, pepper and hot pepper sauce in food processor; process until just combined (mixture will be thick.)
15. Add carrot, flour, egg and olives.
16. Process using on/off pulsing action until well blended; transfer to large bowl. Stir in remaining half of lentils with spoon.
17. Coat bottom of large skillet with oil.
18. Heat over medium-high heat until very hot.
19. Place 2 rounded Tbs. of lentil mixture in palm of hand; shape into patty. Repeat with remaining lentil mixture.
20. Place patties in skillet. Flatten to even thickness with spatula.
21. Cook patties over medium heat 6 to 7 minutes on each side until browned on both sides, adding additional oil if needed.
22. Serve with Coconut-Mango Relish.
