Lentil Granola Bars

These are tasty and filled with an unexpected benefit.... fiber from the lentils.
Ingredients:
2/3 cup shredded coconut
1 cup walnuts, chopped
2 cups rolled oats
1 cup brown sugar
2/3 cup all-bran cereal
3/4 cup cooked lentils, pureed
1 egg, lightly beaten
1/2 cup oil
Directions:
1. Preheat oven to 350°F
2. In mixing bowl, combine coconut, walnuts, rolled oats, brown sugar.
3. and cereal. Add lentil puree, oil and egg. Mix just until dry ingredients are.
4. moistened. Spread into 10X15 inch cookie sheet which has been sprayed with non-stick spray. Place oven rack in center of oven; bake 30 minutes or until lightly browned. Cut while still warm into 2 inch squares.
