What a nice side dish to add extra nutrition and fiber to a meal! Cook time does not include cooking the lentils & rice.
Ingredients:
1 c. cooked lentils
1 c. cooked white or brown rice
1 tomato, diced
1 carrot, sliced, diced or grated
1 stalk celery, diced
1 small onion, diced
italian dressing to taste
Directions:
1. Cool lentils & rice.
2. Add rest of ingredients.
3. Chill before serving.
