Lentil Chili

This is a hearty chili. The only chili my DS will eat because he hates beans. It is also a great pantry/shelf stable dish.
Ingredients:
5 cups water
1 teaspoon salt
1 lb dry lentils (we like the red)
1 lb tomato
1 1/2 teaspoons chili powder
1/2 teaspoon cumin
Directions:
1. Add salt to water and heat to boiling. Add the lentils and simmer for 30 minutes. Do not drain!
2. Add everything else and simmer for 10-15 minutes.
